Personally, I especially like using the "<em>how</em>" question the best: "I spent the summer in Prague." "Wow. <em>How</em> did you enjoy that?" "I quit my job." "Wow. <em>How</em> do you feel about that?" "I'm getting married!" "Wow. <em>How</em> excited are you?!" When I'm trying to do the open-ended thing, I always start with "<em>how</em>".
